Lexie's Chicken Tikka Masala


So many have requested this recipe for Chicken Tikka Masala that Lexie (@dogstoyevsky) stole it from her dad and sent it to Taste-Tested by the Dog!

MARINADE
400-700 g chicken (you can add as much or little as you want if you is watching your weight)
250ml plain yogurt
Juice of one lemon
1 tbsp chopped coriander
4 tsp garlic & ginger paste each
2 tsp chili powder
1 tsp salt
1/2tsp turmeric


 
MASALA SAUCE
1/2 can chopped tomatoes or 4 tomatoes chopped up
1 onion, sliced
1" chopped ginger (dad uses the whizzy machine to make it really fine)
3 crushed garlic cloves
3 chopped green chilies
2 tbsp brown sugar
1 tsp tomato puree
2 tsp garam masala
1 tsp turmeric
1/2 tsp chili powder (can add 1 if you like it more spicy)
2 tbsp ghee
4 tbsp single cream (and some single cream for decoratins on top and some coriander too!)

DIRECTIONS
Mix all the marinade in a big bowl.  Add cubed chicken in and stir well.  For marinating at least 1 hour, best overnight if you can.

Put the chicken on skewers and cover with marinade under a hot grill, turnin an marinadin all the time until you run out of marinade (to baste with chicken is nice and cooked with lovely crispy bits 20 mins)!

Prepare the sauce at same time as cooking the chicken.  Heat the ghee in a pan first and fry onions for 5 minutes until soft (don't burn). Add ginger and garlic and cook for a couple more minutes. Add in spices and stir in well for 1/2 minute or so.  Add remaining ingredients and simmer on low heat for 20 minutes.  Dad uses a hand blender to make it alls smoove once cooked.  Mix in the cream and bring to boil slowly, then turn of the heat, allow to cool for a little.

Now, its up to you … you can either mix in the chicken and serve up or what dad does is make basmati rice with turmeric to make it all nice n yellow.  He then serves up rice with the chicken tikka on top and pours over the sauce on top. He then tops off with cream and coriander.
